Ingredients:

100g Courgettes
100g Spring onions
100g Carrots
45g Rice noodles
Soy sauce
Arrowroot
Sesame Oil
1 fillet Seabass
Banana leaf
3 slices of beetroot

Method:

Step 1: Fillet the fish
Step 2: Pan fry the fish with the skin
Step 3: Cut the vegetables into Julienne
Step 4: Blanch the vegetables and banana leaf
Step 5: Thicken the soy sauce with arrowroot
Step 6: Cook the rice noodles in boiling water
Step 7: Slice the beetroot using a mandoline
Step 8: Shape the banana leaf into a cone and stick the ends with glucose
Step 9: Put the fish inside the cone
Step 10: Arrange the vegetable and noodle components on the plate.
